Day 6-7

I have been very sleepy this weekend. I seem to be right on schedule with everything so far!   I was able to get a nap in yesterday but I had coffee late in the morning so just I just lay still in bed for an hour (very nice!).  I did doze off a bit and was woken up by my daughter running into my room and shoving her sprinkle doughnut in my face proudly showing off what her and daddy did for their 'date'.  That hurt a little bit..... :) 

We had friends over for dinner which was great as it was a much overdue visit!  I made spaghetti for everyone and I had spaghetti squash instead of pasta and no garlic bread.  It was good!  Until dessert.... I SWYPOed again.  And made some "apple pie"- sauteed apples in coconut butter, 2 finely chopped dates, lots of Cinnamon, splash of coconut milk.... topped with some coconut better and those coconut chips from the other night!  I could use my imagination and pretend it was apple crisp!  It was good!  But wasn't quiet what I wanted (store bought chocolate chip lava cakes like everyone else... I couldn't stand to make something and not eat it so Mike picked these up..... they looked sooooooooooo good!)  but it his the spot for wanting dessert!  So I survived my first social situation! 

Went to bed early last night only got woken up twice by the kids and got to sleep until 7.  *Yay!!*  

Day 6:
Breakfast- scrambled eggs, leftover broccolette, coffee
Lunch- leftover coconut chicken tenders with lemon garlic veggies
Dinner- beef spaghetti sauce with squash and a green salad.

Snacks:  handful of cashews, "apple pie", banana, random berries

Day 7:
Breakfast- scrambled eggs in coconut oil, strawberries and banana chopped and drizzled with warm coconut butter
Lunch- found some frozen butternut squash soup topped with avocado, whipped up some sauteed baby bok choy (and prepped some veggies for the week), and a hard boiled egg.
 Dinner- either leftover spaghetti or chicken with baked butternut squash and frozen veggies.... I want to save my leftovers for tomorrow which is a busy day so we will see :)

Happy Sunday!  Off to go rest some more with a good book.

Your apple pie concoction sounds delicious!! My plan is to make some apple chips with my legal green apple and a bit of cinnamon.
